What is tiger nut flour? An organic and gluten free alternative

Valencian tiger nut flour is obtained by grinding the whole tubers and sieving the powder through a fine screen to obtain an extra fine quality flour, perfect for a wide variety of recipes. Tiger nut flour is becoming known all over the world an ideal substitute for wheat flour, due to its natural sweet taste, its nutritional properties and especially because it is a gluten-free flour.

What is Tiger Nut Flour?

This flour comes from organic Valencian tiger nuts, an edible root tuber that fits in all types of diets and suitable for consumers suffering from food intolerances, for example gluten-free diets, sugar-free recipes, vegan and plant-based dishes, kosher diet, halal diet, etc. Tiger nut flour is ideal as a substitute for cereal flours containing gluten or unpleasing legume flour to prepare all kinds of recipes.

The flour acquires its natural flavour from the Valencian tiger nut, thanks to our curing process, in which the tiger nuts are slowly dried, gradually loosing its moisture and acquiring its naturally sweet flavour.

Tiger Nut Flour Healthy Properties and Essential Nutrients

The organic Valencian tiger nut is a great source of natural minerals such as calcium, potassium, phosphorus, sodium, iron and zinc, as well as unsaturated fats, proteins and vitamins C and E and folic acid.

Organic tiger nut flour comes from the growing tiger nuts following organic practices guaranteeing it is free of synthetic chemicals, pesticides and herbicides. According to the article Scientific Evidence about Organic Production published by the Spanish Society for Organic Agriculture (SEAE), it is advisable to change our diet to organic food and ingredients to prevent diseases and boost our health and well-being.

At L’Obrador de Bou, our workshop, we make our crêpes with Valencian tiger nut flour combined with buckwheat flour, our famous L’Obrador cake, a tender and tasty tiger nut sponge cake. In addition, we make an innovative range of tiger nut flour cookies without added sugar, with chocolate or spirulina.
